D-FEAST FRIDAY...

Karen, of Bitter-Sweet Diabetes , Lorraine of This is Caleb, and Elizabeth, of Pieces of My Life came together to host D-Feast Friday today, where Diabetic bloggers are encouraged to post a recipe that works well with their meal planning, insulin giving, carb counting life with Diabetes.


The Protein Cookie is my current breakfast of choice! I first came across it on The Fitnessista's Blog. (A daily read that I LOVE!). Her blog is full of inspiring ways to eat and live a healthy life. Follow her and read about her own journey to health...along with other "food & fitness" bloggers I have listed on my blog roll.

This "cookie" keeps me full and satisfied and for some reason DOESN'T raise my blood sugar like a traditional bowl of oatmeal typically does.

The following recipe is how I make it, but it can be totally re-customized to fit your health needs and specific tastes.

Here goes...




Pour following DRY ingedients into a bowl:

and finally...
To dry mixture & add:
If you follow the recipe I just showed, using the same measurements and brands, you will get 34 grams of carbs.
Mix it up and add whatever you like, dark chocolate, 1/2 mashed banana, coconut, chia seeds...
The possibilities are endless!

I like to make 7 of these on a Sunday afternoon and I'm set for breakfast for the week!

  4. This really is a great breakfast...especially if you like experimenting. The key is to keep it in the fridge overnight (or at least for 2 hours). The milk softens the oats.

    You can make it on a plate...and it will look more like a "cookie"...but I recomend eating it with a spoon.

  7. Ooh, this looks so good! Kind of like oatmeal cookie dough, which is my favorite raw cookie dough... :) I'm going to have to try this. (I have NONE of these ingredients, other than the oats and flax seed...but it looks almost worth a shopping trip!)

  9. OKAY, I finally got around to trying this just this morning. It was everything my heart desired!! I have a special place for breakfast and I'm very picky. This is fantastic. I will be making it daily from now on. OH so tasty, filling, satisfying and HEALTHY! THANK YOU!!
