The Protein Cookie is my current breakfast of choice! I first came across it on The Fitnessista's Blog. (A daily read that I LOVE!). Her blog is full of inspiring ways to eat and live a healthy life. This "cookie" keeps me full and satisfied and for some reason DOESN'T raise my blood sugar like a traditional bowl of oatmeal typically does.
The following recipe is how I make it, but it can be totally re-customized to fit your health needs and specific tastes.
Pour following DRY ingedients into a bowl:
To dry mixture & add:
If you follow the recipe I just showed, using the same measurements and brands, you will get 34 grams of carbs.
Mix it up and add whatever you like, dark chocolate, 1/2 mashed banana, coconut, chia seeds...
The possibilities are endless!
I like to make 7 of these on a Sunday afternoon and I'm set for breakfast for the week!
